Recently I decided to bake whilst my family watched rugby (boring!) but didn't have any eggs, so I found this recipe on line. Its a plain chocolate cake recipe, but I smothered it in butter cream icing (highly recommended...it gives the cake so much flavour!)
Okay, so here's the recipe! remember and set your ovens before you start :) (just the usual temperature for baking)
INGREDIENTS
- 170g (6 oz) butter (unsalted)
- 110g (4 oz caster sugar
- 2 tablespoons golden syrup
- 250ml milk
- 2 drops of vanilla extract (optional but again recomended)
- 170g (6 oz) plain flour
- 55g (2 oz) cocoa
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate of soda
Don't do what I did, which was use self raising flour in place of baking powder, bicarb of soda and plain flour. It barely rised which was a let down, but this recipe makes enough to pour into two cake tins!
WHAT TO DO

Melt the butter, sugar, syrup and milk over a low heat. This took me between 5 and 10 minutes at the heat of 6.

Once melted add the flour, cocoa, baking powder and bicarb. NOT SELF RAISING FLOUR!

Stir well and pour into a greased tin (as I said above, the mixture will fit in 2 tins, also remember if using silicone dishes you don't need to grease)

Cook it now, you will really need to keep an eye on this as the recipe says to cook for a full hour but it only took me half an hour, although many of the comments say it took them 20 minutes!.
That is just the sponge recipe, to make the icing I simply mixed together 175g icing sugar with 75g butter and a few drops of vanilla extract. You may want to soften your butter before you start but don't (and I repeat don't!) let it melt.
